A vibrant woodland cocktail where bright birch and fragrant elderflower meet the citrusy lift of fresh lemon with a helping hand from pine. Crowned with a lively raspberry and ginger foam for a refreshing twist.

Ingredients
For the cocktail:
- 35ml Birch and Elderflower Wild Scottish Spirit
- 20ml fresh lemon juice
- 15ml Scots Pine Wild Botanical Syrup
For the raspberry and ginger foam:
- 200ml ginger beer
- 20g fresh raspberries
- 10g sugar
- 1.35g methylcellulose
- 0.4g xanthan gum
- Pinch of salt
Method
- Make the raspberry and ginger foam first. Combine the fresh raspberries, ginger beer, sugar and salt in a blender and blend until smooth.
- Add the methylcellulose and xanthan gum, then blend again until fully incorporated.
- Transfer the mixture to a cream whipper and charge with nitrogen. If you do not have a cream whipper, blend on high until light and airy, then set aside.
