A vibrant woodland cocktail where bright birch and fragrant elderflower meet the citrusy lift of fresh lemon with a helping hand from pine. Crowned with a lively raspberry and ginger foam for a refreshing twist.

Ingredients

For the cocktail:

For the raspberry and ginger foam:

  • 200ml ginger beer
  • 20g fresh raspberries
  • 10g sugar
  • 1.35g methylcellulose
  • 0.4g xanthan gum
  • Pinch of salt

Method

  1. Make the raspberry and ginger foam first. Combine the fresh raspberries, ginger beer, sugar and salt in a blender and blend until smooth.
  2. Add the methylcellulose and xanthan gum, then blend again until fully incorporated.
  3. Transfer the mixture to a cream whipper and charge with nitrogen. If you do not have a cream whipper, blend on high until light and airy, then set aside.
