A bright and simple sparkling serve combining crisp Prosecco or Cava with fresh raspberry purée. It is an easy summer drink with plenty of fresh fruit flavour.
Ingredients
- 125 ml Prosecco or Cava
- 25 ml raspberry purée
- fresh raspberry, to garnish
Method
- Add the raspberry purée to a chilled flute.
- Slowly top with the Prosecco or Cava.
- Stir gently to combine.
- Garnish with a fresh raspberry.
Tips
- To make the purée, blend fresh or fully defrosted raspberries until smooth.
- Push the purée through a fine sieve with the back of a spoon to remove the seeds.
- Freeze leftover purée in an ice cube tray to create individual portions for future drinks.
