Our first release, Birch and Elderflower Wild Scottish Spirit, is a clear, modern, Scottish spirit.

We use birch buds and elderflowers lovingly picked from Spring woodlands near our on-farm distillery. We copper distil them to produce a smooth, tantalizing and surprising forest-fresh flavour with light floral hint from the elderflower and a long, warm finish.

It works great as a frozen shot, over ice or with soda water garnished with a slice of apple for our perfect pour. It is a great alternative to gin or vodka in cocktails.

Crafting Birch and Elderflower Spirit

We carefully hand-pick Birch buds and Elderflowers, combining them with high-quality grain spirit and mineral-rich spring water. These ingredients are then copper distilled, creating a refined and flavourful Birch and Elderflower Spirit.

Ingredients:

  • Birch and Elderflower Wild Scottish Spirit

Enjoy as an aperitif - with, or after a meal and when toasting your friends and family.

Crisp Fresh and modern

Cold Brew New Fashioned

Ingredients

  • 50ml Birch and Elderflower Spirit
  • 50ml Cold Brew Coffee
  • 1 Cap Wild Scottish Bitters
  • 15mls Scots Pine Syrup

In a mixing glass add all ingredients, stir, strain and serve.

Super-fresh, super-tasty, super-zesty

Highland Margarita

Ingredients:

  • 50ml Birch and Elderflower Spirit
  • 25ml Countreau
  • 50ml Lime Juice
  • Salt rim of glass
  • Ice

In a cocktail shaker add the Birch and Elderflower spirit, the Cointreau, lime juice and ice.  Shake thoroughly and strain into a martini glass that has had the rim salted.
