Scots Pine Winter Mint Chill

A bright, herbaceous cooler that pairs the resinous depth of Scots Pine with fresh mint, lemon and a gingery finish. Punchy, aromatic and refreshing.
Ingredients
- 25ml Scots Pine Wild Botanical Syrup
- 15ml lemon juice
- Small handful of fresh mint leaves
- 50ml ginger ale, to top
- Mint sprig, to garnish
Method
- Muddle the mint leaves in the bottom of a cocktail shaker to release the oils.
- Add the Scots Pine syrup and lemon juice to the shaker and stir vigorously.
- Pour into a chilled rocks glass.
- Fill the glass with ice.
- Top with ginger ale.
- Garnish with a mint sprig and serve.
