Scots Pine Sour Mocktail

A classy mocktail to serve as a true alternative to an alcoholic sour. Scots Pine brings creamy vanilla sweetness to balance the citrus and the astringency of the softly floral tea. The pomegranate float beneath the frothy top elevates the appearance of this drink and balances the flavours beautifully.

Ingredients

  • 150ml chilled chamomile tea
  • 25ml lemon juice
  • 15ml Scots Pine Wild Botanical Syrup
  • 1 tbsp egg white (or aquafaba for a vegan alternative)
  • 10ml pomegranate juice, to float

Method

  1. Pour the chilled chamomile tea, lemon juice and Scots Pine syrup into a cocktail shaker.
  2. Stir the egg white with a fork to loosen it, then add 1 tbsp to the shaker.
  3. Dry shake (without ice) until the mixture is frothy.
  4. Add a good handful of ice and shake again hard for 15 seconds.
  5. Strain into a rocks glass filled with fresh ice.
  6. Top up the pomegranate juice with a little water to make 20ml, then slowly pour into the glass.
  7. Let it settle for a moment so the juice floats just beneath the egg white foam, and serve.
