Scots Pine Resolution Mocktail
The Scots Pine Resolution Mocktail is a refreshing alcohol-free serve with bright citrus, cooling mint and a gentle woodland note from fresh pine. Light, uplifting and aromatic, it’s perfect as a winter warmer without alcohol or a crisp non-alcoholic option year-round.
1. Cut the pine needles and stem in half, place in a mug and cover with boiling water.
2. Allow to steep until completely cool to create a fresh pine tea. (This can be refrigerated for up to 2 days if not using immediately.)
3. Lightly crush a few mint leaves in the bottom of a tall glass to release their aroma.
4. Fill the glass halfway with the chilled pine tea.
5. Add Scots Pine syrup and ice, then top up with ginger ale.
6. Stir gently, garnish with a lemon slice and serve.
Ingredients
- A few sprigs of fresh pine needles
- 25ml Scots Pine syrup
- A couple of fresh mint leaves
- 1 lemon slice (plus extra for garnish)
- Ginger ale
Tip: The pine tea can be made in advance and kept chilled, making this mocktail quick to assemble when needed.
