Rosebay Sour Mocktail

A classy mocktail to serve as a true alternative to an alcoholic sour. Rosebay brings fruity, floral sweetness to balance the citrus and the astringency of the tea. The cranberry float beneath the frothy top elevates the appearance of this drink and balances the flavours beautifully.

Ingredients

  • 150ml chilled Earl Grey tea
  • 25ml lemon juice
  • 15ml Rosebay Wild Botanical Syrup
  • 1 tbsp egg white (or aquafaba for a vegan alternative)
  • 10ml cranberry juice, to float

Method

  1. Pour the chilled Earl Grey tea, lemon juice and Rosebay syrup into a cocktail shaker.
  2. Stir the egg white with a fork to loosen it, then add 1 tbsp to the shaker.
  3. Dry shake (without ice) until the mixture is frothy.
  4. Add a good handful of ice and shake again hard for 15 seconds.
  5. Strain into a rocks glass filled with fresh ice.
  6. Top up the cranberry juice with a little water to make 20ml, then slowly pour into the glass.
  7. Let it settle for a moment so the juice floats just beneath the egg white foam, and serve.
