Our modern Scottish whirl on the Mojito, one of the most popular cocktails in the world. We swap white rum for our Birch and Elderflower spirit and you can punch up the floral tones using Elderflower syrup instead of plain or mint syrup.
Ingredients
- 50 ml Birch and Elderflower Wild Scottish Spirit
- 25 ml lime juice
- 2 dashes sugar syrup (elderflower or mint for extra flavour)
- mint sprigs
- lime segments
- soda or sparkling water, to top
- mint sprig and lime wedge, to garnish
Method
- Muddle mint sprigs and lime segments in a highball glass.
- Add the spirit, lime juice, and syrup.
- Stir vigorously to combine.
- Fill the glass with crushed ice.
- Stir well.
- Top with soda or sparkling water.
- Stir briefly.
- Garnish with a mint sprig and lime wedge.
