Wild Southside Fizz

A long fresh version of the Wild Southside.
In a cocktail shaker muddle the mint and then add the Larch and Honeysuckle spirit, lime juice ice and elderflower syrup. Shake vigorously and strain in to a tall glass with and top up with soda water and garnish with a slice of lemon and mint leaves.
Ingredients
- 50 ml Larch and Honeysuckle Wild Scottish Spirit
- 25 ml lime juice
- 15 ml elderflower syrup
- soda water, to top
- mint leaves
- lemon slice and mint leaves, to garnish
Method
- Muddle mint leaves in a cocktail shaker.
- Add the spirit, lime juice, and syrup with ice.
- Shake hard for 10 to 12 seconds.
- Strain into a highball glass over ice.
- Top with soda water.
- Stir briefly.
- Garnish with a slice of lemon and mint leaves.
