Scots Pine

With thanks to Jack of Scottish Mixology for this recipe.  Scots Pine is a unique and refreshing cocktail. 

In a highball, pour in the vodka, mastiha*/pine syrup and highland boundary.

Cut the grapefruit and squeeze a little juice into the mixture. 

Fill the glass with ice cubes and stir. 

Place in your grapefruit slice and rosemary sprig and top up with tonic.  

*If you are unable to source mastiha, you could make your own pine syrup. To do this, in a pot, pour in 150ml boiling water, 25g caster sugar and add several pine tree cuttings (make sure they’re clean first). Simmer until reduced and slightly thickened. Once happy with the taste (add more sugar or pine if needed), discard the pine and strain into a jar. 

 

Ingredients

  • 25ml Highland Boundary Birch & Elderflower Wild Scottish Spirit
  • 25ml Gin or Vodka
  • 25ml Mastiha liqueur* or pine syrup
  • Slice of pink grapefruit
  • Sprig of rosemary
  • Mediterranean tonic
