With thanks to Jack of Scottish Mixology for this recipe. Scots Pine is a unique and refreshing cocktail.
Ingredients
- 25 ml Highland Boundary Birch & Elderflower Wild Scottish Spirit
- 25 ml gin or vodka
- 25 ml mastiha liqueur or pine syrup*
- mediterranean tonic, to top
- pink grapefruit slice and rosemary sprig, to garnish
Method
- Add the spirit, gin or vodka, and liqueur or syrup to a highball glass.
- Squeeze a little juice from the grapefruit slice into the glass.
- Fill the glass with ice.
- Stir gently to combine.
- Top with mediterranean tonic.
- Garnish with a grapefruit slice and a rosemary sprig.
*If mastiha is unavailable, make pine syrup by adding 150 ml boiling water and 25 g caster sugar to a pot with clean pine cuttings. Simmer until reduced and slightly thickened. Adjust to taste, discard pine, and strain into a jar.
